Denomination of Origin Vinos de Valtiendas

The DO Vinos de Valtiendas, in the northwest of the province of Segovia, borders on the Denomination of Origin Ribera del Duero, in the vicinity of one of the most beautiful natural areas of the region: the Natural Park of the Hoces del río Duratón.

Currently the wineries in the area are concentrated in Valtiendas, which gives name to these Segovian wines, made with the same variety and with the same techniques as in the DO Ribera del Duero.

The Valtiendas Professional Grape and Wine Association was officially created in June by 2004. They are wineries founded from the 1994 year within the municipality of Valtiendas, an area recognized by all experts as one of the best in all of Castilla León to produce quality grapes.

At present, the DO has these wineries: Tinto Redreja, Vagal, Valviña, Zarraguilla, Viña Sancha (Finca Cárdaba) and Bodegas Navaltallar.

Brief History

Bodegas Navaltallar was born in 2003, fruit of the interest of Romualdo Maldonado and his family to recover the winemaking tradition in the town of Navalilla, where according to the chronicles of Castile, King Alfonso VII, promoter of the Community of Villa and Tierra de Sepúlveda, sent look for wine in the dawn of the twelfth century. The viticultural activity remained in the area until the 60 decade of the last century when, because of the phylloxera, it had to be removed from the vineyard.

Navaltallar has managed to recover 10 has vineyard from the more than 300 that existed in the term. Since then the production has been growing until reaching the 40.000 kg per year. From a unique combination of climate and soil, it guides its entire production process to the quality of its Tempranillo-based varietals.

Narrow plantation frames in combination with the vigor of the vineyard give rise to clusters of small berries and thick skins. Later, green pruning eliminates up to 60% of the fruit load until it is 4.000 kg per hectare.

An adequate control of water stress, the late (late October) and selective harvest of slightly over-ripened grapes, end up creating an original product of great structure but without excessive alcoholic strength (13o). In the winery, the processes of maceration, fermentation, stabilization and aging are oriented to the maximum extraction of aroma, flavor and color of its 100% tempranillo grape.

Cold maceration and fermentation are carried out in steel tanks of 10.000 liters, with controlled temperature and constant overpumping, with which maximum extraction is achieved from the grape's original potential. Stabilization, also in steel tanks, lasts several months and in any case cold processes that damage the structure of the wine are avoided. The aging takes place in American and French barrels with an appropriate combination of new wood and second and third vintages.

Brief History

200 years ago and more, many more, in Sacramenia, the cultivation of vines and wine making was a custom of all its neighbors and also a way to make a living. But things have changed considerably since then. There are many who have left the town and many others, almost all, those who are no longer engaged in the cultivation of the vine. The few that do it, they elaborate it for personal use. That yes, of traditional form, in the same warehouses that excavated their ancestors in the rocks and with the same techniques.

A few years ago, someone in the village decided to set up a disreputable cellar. A new winery, applying modern techniques, with the main objective of getting a quality wine and market it. The result of this work is Zarraguilla wine. They placed it in a picturesque building in the village, rehabilitated it and gave it a charm that few could have achieved. On the upper floor the floors are made of wood. A place that could well pass for being the great hall of a rural hotel. Ancient country implements, adobe oven (built by Martín de Andrés) and geraniums in wooden windows. On the ground floor, the cellar, the barrel park (American and French), bottle racks, labeling machines and steel tanks.

It produces a wine of half aging, with 6 months in barrel and other 6 in bottle. This last year has begun to use the Allier oak, with excellent results. The tempranillo grape comes from its own vineyards (10 hectares) and another small part that they buy from local farmers. The name of the wine, Zarraguilla, seems very original but it has many years, as many as its family, because it is the nickname by which they are known in the town and whose origin they do not know.

Brief History

Precursors in the area of ​​the theories of the Austrian Rudolf Steiner. Harmony between the animal world, the vegetable and the mineral. Where the Moon and the Sun influence the development of the vineyard, Biodynamic Viticulture, where they do not use residual herbicides or mineral fertilizers, using intercepa plows and organic fertilizers. Both the pruning and the collection of the grapes are carried out with a waning moon.

The pruning is done in December, in order to lengthen the vegetative cycle. After sprouting, green pruning is thorough, limiting production. In time of flowering, they atomize, in order to disfavor the fertilization, pruning the clusters in summer, separating and limiting the production to 4.000 Kg per hectare.

The harvest is manual, with a waning moon, transporting the grapes in a stainless steel trailer 3.500 Kg, once destemmed and crushed, the grapes are sent to the deposits at 10oC, in order to make a pre-fermentative cold maceration.

Brief History

The Blanco brothers bet strong in the middle of the 90 for viticulture in Valtiendas. The result was a modern winery that transforms the grapes of its 40 hectares into trellis with 20 years of age. Brief History

The Finca Cárdaba Winery was born in 1997 by the Sancha de Frutos brothers, united to continue the winemaking tradition that its father already exercised in the 60 years.

To the south of the town of Sacramenia, in the province of Segovia, the Coto de Cárdaba is located, where the church of the former priory of Santa María de Cárdaba is conserved. The first historical data in which the church appears, date from the year 937, when the Count of Castile, Fernán González, and his wife Doña Sancha, donated the church of Santa María de Cárdaba to the Monastery of San Pedro de Arlanza.

Like all priorates, he dedicated himself to the exploitation of the lands. Among the crops was that of the vine, as evidenced by the accounts of the monastery in the year 1337-1338. The annual production of the vineyard reached the 100 cantaras de vino. But a century later, the situation was unfortunate in Santa María de Cárdaba. Only two monks and a few vassals lived in El Coto. The abbot lived many kilometers away, in the land of Burgos Arlanza. For this reason a barter was made in the year 1488, between the priory of Arlanza and the Monastery of Sacramenia, being commendatory abbot of Sacramenia don Juan de Acebes: "Santa Maria de Cárdaba, it was like a preserve in farm regime of the Cistercian Monastery , with civil and criminal jurisdiction, as a sign of which it had gallows within its term, and under the justice of the "Mayor" of the farm ".

After the confiscation of Mendizábal in the 1835 year, the reserve became a private property.

Bodega Finca Cárdaba owns 30 hectares, located in the Coto de Cárdaba, where its vineyards have an altitude of 830 m and a southerly orientation, unbeatable for the cultivation of the vine because of its great exposure to the sun. To produce wines of the highest quality, they start with their own grapes and a good variety of grapes that adapt to the climatology of the area, in order to achieve their perfect adaptation to the clay-calcareous terroir, and to extract the full potential of the fruit.
