Brief History

Precursors in the area of ​​the theories of the Austrian Rudolf Steiner. Harmony between the animal world, the vegetable and the mineral. The pruning is done in December, in order to lengthen the vegetative cycle. After sprouting, green pruning is thorough, limiting production. In time of flowering, they atomize, in order to disfavor the fertilization, pruning the clusters in summer, separating and limiting the production to 4.000 Kg per hectare.

The harvest is manual, with a waning moon, transporting the grapes in a stainless steel trailer 3.500 Kg, once destemmed and crushed, the grapes are sent to the deposits at 10oC, in order to make a pre-fermentative cold maceration.
