Beans from La Granja

Recipe for 4 rations


  • 1 kg of beans from La Granja
  • 2 pig ears
  • 2 blood sausages
  • 2 Cantimpalos sausages
  • 1 cebolla great
  • 2 Bay leaves
  • 5 cloves of garlic
  • 100 ml of aceite oliva
  • 1 tablespoon flour
  • 1 teaspoon salt
  • 1 tablespoon paprika


The night before their preparation, we put the beans in soaking with cold water. The next day, we began its preparation putting them to cook by throwing the pork ears, blood sausages and chorizos. Once the boil is broken, the water consumed with cold water is replenished and we let it break again. Meanwhile, in a pan, we toss olive oil and brown the garlic, then we toss the flour and paprika, then pour water and stir well. Once we have it, we throw it to the beans and let it cook approximately 2 h trying the judión until it is tender.
