Recipe for 4 rations
- 8 hake slices (1,5 kg)
- 1 kg de patatas
- 1 cebolla great
- 2 cloves of garlic
- 2 tablespoons fresh parsley
- Extra virgin olive oil
- (The necessary to fry the potatoes and a bit for the hake)
- Fine salt and fat salt (to taste)
Prepare the hake cut into slices of about 2-2,5 cm thick leaving the final part of the tail of a piece. We add salt to taste and let it absorb it.
Cut the onion into julienne. In a frying pan, toss the onion with a sheet of olive oil and sauté lightly, over medium heat for 10 min, so that it softens and remains half cooked before putting it in the oven. We reserve We cut the potatoes in a bakery. We put them to fry in hot oil, about 10 min.
We finely chop garlic and parsley. In a bowl, we toss 5 tablespoons of olive oil, garlic and parsley and mix well. We reserve the dressing.
On the baking tray we place a base with the poached onion, on it the bakery potatoes and finally the pieces of hake. On the fish we pour the dressing that we have prepared. We bake 10-12 min at 180º C.
