The Association for the Promotion of the Piglet of Segovia (Procose) is working to create a center of interpretation of this gastronomic product in the city or in the province. Therefore, the project is presented to the different public institutions to know their degree of involvement and count on their collaboration.
The heads of Procose, its president, José María Ruiz, and its manager, José Ramón Marinero, met a few days ago with the new territorial delegate of the Board, José Mazarías.
“We are doing an information round with the administrations,” explained the manager, José Ramón Marinero, who also defends the convenience of the Interpretation Center being located somewhere in a tourist passage that allows visitors arriving in Segovia to meet more about this livestock, cultural and gastronomic product that is already part of the attractions of the capital.
In its meeting in the Delegation of the Board, Procose transferred to the person in charge of the Board the activities that it is currently developing and its proposals for the future, among which are this Interpretation Center, which would serve to continue advancing in its promotion.
During the meeting they reviewed the open collaboration paths between the Association and the Autonomous Administration to achieve recognition of this emblematic Segovian product as a Cultural Interest Property (BIC) for its cultural and heritage value, as well as its economic and livestock importance. The declaration as BIC would be the previous step to begin the process to obtain the declaration of the Segovian piglet as Intangible Heritage of Humanity by Unesco. That was one of the objectives approved at the last Procose assembly.
For his part, the territorial delegate, José Mazarías, valued the “important work that they carry out from the Association that has managed to raise the level of the piglet, a typical dish that has given so much international name to our province”.
After the meeting with the delegate of the Board, Procose plans to meet today with the president of the Diputación, Miguel Ángel de Vicente.
